THE USDA FSIS ALLEGES E.COLI SOURCE IN SOME BEEF AND PORK FROM TENDERIZATION PROCESS

The US Department of Agriculture Food Safety Inspection Service (FSIS) has renewed focus on mechanical meat tenderization as a possible cause for the increase in E. coli in beef and pork products. The practice used to breakdown muscle fiber and add marinades allegedly transfers bacteria from the surface to the core of products which require higher cooking temperatures to kill bacteria.

It is now currently known how these processes are managed within the plants using them and what procedures should be utilized to prevent the spread of E. coli during processing. Investigation into this situation was generated due to several recent multi-state recalls.
